Thai Chicken with Basil

4 range fed boneless skinless chicken breasts (about 1 1/4 lb)
1 tablespoon olive oil or sub coconut oil
3 organic cloves garlic, finely chopped
2 organic red or green jalapeño chiles, seeded, finely chopped
1 tablespoon fermented soy sauce
2 tablespoon raw honey
1/4 cup chopped fresh organic basil leaves
1 tablespoon chopped fresh organic mint leaves
1 tablespoon chopped soaked raw nuts of choice if desired

1. Cut each chicken breast into 4 pieces.
2. grease 12 ” cooking tray with coconut oil. Add olive oil; heat over medium-high heat. Cook chicken, garlic and chilies in oil 8 to 10 minutes, stirring occasionally, until chicken is no longer pink in center. Stir in sauce and honey. Sprinkle with basil, mint and nuts.
